The present book wants to be an informative one about what the Romanian gastronomy has preserved as traditional recipes (cooked by at least three generations, grandmother, mother and daughter...), gastronomy that is equal to our identity, as Romanian people of the Balkan, Latin origins and much more. And because a whole country is made up of many well-welded parts, apart from the recipes that defined the national gastronomy as one of its own, with its own identity, the regional gastronomy or the recipes that were born in the regions of Romania are diverted from one-a mother recipe, differences consisting in the taste of local ingredients or different cooking techniques used.

The most loved recipes from the Romanian traditional cuisine are for those who would like to discover the Romanian gastronomy, tourists and foreigners interested in this delicious side of our culture, for the Romanians who live abroad and have forgotten the tastes of childhood, and all thosewho are willing to know about some of our gastronomical flavours. Hence the book has been translated into English, with the purpose to make any of these recipes known, accessible and casy to cook. I propose that more and more people arriving in Romania would understand what we joyfully serve whenever a tired traveller or a tourist in quest of knowledge passes by.
